This Strawberry Daiquiri recipe makes two generous frozen cocktails with strawberries, white rum and a proper squeeze of fresh lime. It is a cheerful choice for a hot South African Christmas, especially when everyone has found a shady spot outside while lunch finishes cooking.

Frozen strawberries give the drink its thick, slushy texture without needing heaps of ice that dilute the flavour. Choose unsweetened berries, then adjust the sugar syrup after blending: some batches are naturally sweet, while others need a little help.

Chill your glasses before you begin and keep the ingredients cold. This is a blend-and-serve drink, so have your garnishes ready and pour it as soon as the texture is smooth and spoonably frosty.

Instructions

  1. 1
Place two glasses, each with a capacity of about 350 ml, in the freezer while you prepare the drink.
  2. 2
Measure the rum, lime juice and sugar syrup into a blender suitable for crushing ice.
  3. 3
Add the frozen strawberries and ice. If the berries are frozen into a solid clump, separate them before adding.
  4. 4
Pulse to break up the berries, then blend until evenly slushy, usually 30–60 seconds. If the blades struggle, switch off before scraping down the jug and add cold water, 15 ml at a time, only as needed.
  5. 5
Taste a little of the mixture. If it is too tart, blend in another 5 ml sugar syrup; if too sweet, add a small squeeze of lime. Keep adjustments small so the drink stays thick.
  6. 6
Divide between the chilled glasses, garnish each with a fresh strawberry and serve immediately.

Christmas tips

  • For local fresh strawberries, wash, hull and dry them well, then freeze in a single layer until solid before packing into a container. Allow at least 4 hours; this is additional to the recipe's prep time.
  • To make sugar syrup without cooking, stir 50 g caster sugar into 50 ml room-temperature water until completely dissolved. Measure out what you need and refrigerate the remainder in a clean, sealed jar for up to 1 week.
  • For Christmas guests, measure the liquids ahead and refrigerate them. Keep the berries and ice frozen, then blend two servings at a time rather than overfilling the blender.
  • Serve in the shade straight after blending. This cocktail contains alcohol; keep it for adults and offer a clearly labelled alcohol-free option alongside it.

Frequently asked questions

Can I use fresh strawberries instead?

Yes, but freeze them first for the texture intended here. Fresh berries straight from the punnet produce a thinner drink, and adding lots of ice to compensate weakens the strawberry flavour.

Can I make it without alcohol?

Yes. Replace the rum with 60 ml cold water or coconut water, then add a little more only if needed for blending. Taste before adding all the syrup, particularly if using coconut water.

Is this the same as a classic daiquiri?

This is a frozen strawberry variation. A classic daiquiri is made with white rum, lime juice and sugar, shaken with ice and strained rather than blended with fruit.
